Easy banana bread is one of the most popular recipes on my blog, those pancakes are its take over: fluffy, moist and easy as pie. But I should rather say easy as banana bread.
Fluffy Banana Pancakes with Buttered Cinnamon Honey
serves 2
pancakes
2 bananas, overripe
2 eggs
3 tablespoons greek yogurt
⅔ cup (90 g) all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
⅓ teaspoon cinnamon
butter + oil, for frying
buttered cinnamon honey
2 tablespoons honey
1 tablespoon butter
½ teaspoon lemon juice
½ teaspoon cinnamon
1. Heat a large skillet with over medium heat; brush with some butter and oil.
2. Slice one banana; set aside. Mash the second banana in a medium bowl. Add the eggs and yogurt; combine. Stir in the flour, baking powder, salt, and cinnamon, just to blend.
3. Working in batches, scoop 2 tablespoons of batter onto the skillet. Top with 2 slices of banana. Cook the pancakes until bottoms are golden brown and bubbles form on top, about 3 minutes. Flip and cook until cooked through and other side of the pancakes are golden brown, about 2 minutes longer.
4. Meanwhile, make the sauce. Melt the butter in a small pot. Remove from the heat; stir in the honey, lemon juice, and cinnamon. Serve with the banana pancakes
Tip
You can easily scale or double this recipe. I like to spoil myself with those in the morning just on my own.
