A banana never-ending story. I’ve developed many different cakes in my life, but this banana bread is simply addicting. Fluffy, spicy and trivially easy (requires just a bowl, fork and 5 minutes).
Easy Banana Bread
10 cm x 20 cm (4 x 8 inch) loaf pan
1 ¾ cup (220 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ cup (100 g) brown sugar
⅓ cup (80 g) sour cream or greek yogurt
100 g butter, melted and
2 eggs
3 – 4 overripe bananas
½ cup chopped walnuts or chocolate
1 banana, halved
1. Preheat the oven to 350°F (180°C), and line a 4×8-inch loaf pan.
2. Mash the bananas with a fork until completely smooth in a medium bowl. Add the eggs. Stir in the butter, followed by the sugar and sour cream.
3. Combine the flour with baking soda, baking powder, salt, and cinnamon. Whisk into the banana mixture. Fold in the chocolate and/or walnuts, if using. Scrape the batter into prepared pan. Top it with the halved banana, and sprinkled with 1 tablespoon sugar.
4. Bake until golden brown and a toothpick inserted in the middle of the loaf comes out clean, 50 minutes. Turn out the banana bread and let cool completely (if you can resist) before slicing.
Tip
You can’t go wrong with any banana bread. But there’s also room for some improvement. Add chocolate chunks, sour cream and a dash of cinnamon, you will see how better it could be.
